Technologically speaking, the content on your blog (copy--text) is what gives Google's bots information to crawl, so when a user Google Searches "armadillo taxidermy near me", and you just so happen to have a whole blog devoted to the subject, you are more likely to rank higher in Google's search results.
Simply put, Off-Page Optimization is performing tasks that drive traffic and notoriety to your site. A few examples:
